Recipes and non-alcoholic cocktails to make your party go with a bang.

Pollada Spice Mix Recipe

Our suggestion, but do your own thing if you like. Go rogue.

  1. Combine a packet of spice mix (25g) with 2 tablespoons of oil.
  2. Rub the oil mix over 8 pieces of chicken or vegetables chopped into large chunks (we like corn on the cob, aubergine, and peppers).
  3. Cover and leave to marinate in the fridge for a couple of hours while you get your glad rags on.
  4. Grill your chicken or veg on a BBQ or bake in an oven until completely cooked through.
  5. Serve with salads, rice or flatbreads and lots of cold beer.

Pollada BBQ

Salad Inspiration.

Not two words that jump together usually. But you can appease the veggie-lovers and green up your carnivorous guests with vegetable inspiration to make everyone happy. We think the Hemsley & Hemsley Quinoa Roasted Veg salad would be amazing with the cumin based spice mix. And you can’t go wrong with heaps of corn on the cob with chilli, lime and lots of butter. Don’t forget the butter.

Pick rainbow-coloured veg, a sprinkling of greenery and lashings of spicy dressing and you can’t go wrong. This BBC Good Food Peruvian toasted sweetcorn, avocado and quinoa salad will make stomachs happy and all your snaps Instagram-worthy.

Obviously, if you can match your array of vegetables to the Pollada bunting, we will be very impressed and you can go straight to the top of the class.



Non alcoholic cocktails

Pollada is for everyone. So we've created three delicious non-alcoholic cocktails to keep everyone happy. Salud!

Tropical spiced ginger beer

This tastes amazing. Ingredients (for 1):

  • 1/2 lime, cut into 6 chunks
  • 1/2 tsp ground cinnamon
  • 2 fingers mango puree
  • hot ginger beer
  • ice
  • lime wedge to serve

Mudde the lime with the cinnamon in a tall glass. Add puree and fill up the glass with ice. Add ginger beer and stir well to distribute everything. Add more ice and ginger beer to the top, and garnish with a wedge of lime.

Virgin Mojito

A refreshing classic, reborn. Ingredients (for 1):

  • 1 lime, cut into 12 chunks
  • 10 mint leaves
  • 1 tsp sugar
  • cloudy apple juice
  • crushed ice
  • mint sprig to serve

Muddle lime, mint and sugar in a rocks glass. Pack with crushed ice, top with apple juice and mix. Add more ice and mint sprig to serve.

Virgin Maria

A Peruvian twist on a breakfast staple. Ingredients (for 4 people):

  • Juice of two limes
  • 1 tbsp Pollada spice mix
  • 500 ml tomato juice
  • lots of ice
  • Lime wedges to serve

Shake the lime juice with the pollada spice mix hard and pour into a jug. Top up with more ice, add tomato juice, and stir well. Add extra spice, salt and pepper to taste and garnish with lime wedges.

All of these recipes are also great with a slug of the iconic Peruvian spirit Pisco. Careful though, it’s dangerous stuff.
